French Strawberry Icecream

Don’t even bother with this if strawberries are imported or out of season. The recipe is so simple that it relies on the unadulterated taste of perfect summer strawberries and fresh farm cream.
500g Fresh Strawberries
250g caster sugar
Juice and zest of i organic, unwaxed lemon
150-300ml double or whipping cream
Wash and hull the strawberries and liquidize them together with the sugar.
Add lemon to taste, remembering that once frozen, tastes will be blunted so the original should be sharply sweet/sour
Stir in the cream, less if you like it intensely fruity, or more if you go for traditional Strawberries and Cream.
Pour into pots and freeze.
I served little individual ramekins of this ice cream at a recent dinner party. Made with my clients own organic strawberries and accompanied by Regan Daley’s Chocolate Crisps from her book In the Sweet Kitchen. Along with thanks and appreciation from the hostess the next day I had a request for several copies of my recipe to be distributed to her various guests.
