Homemade Honey Granola

1 kg organic rolled oats
500g organic dessicated coconut
500ml organic flaked almonds
250ml organic sesame seeds
1 litre organic honey
125ml organic sunflower oil
60ml of spices (nutmeg, cinnamon, or allspice)

Mix all the dry ingredients and spices
Gently warm the honey and oil
Stir the dry ingredients into the honey mix
The mix should be coated but not wet

Portabello Mushrooms baked with Yoghurt and Ricotta

Take one large whole portabello mushroom per person.
Saute or cook in the oven (10-15 minutes @180*C) with garlic butter, fresh thyme and seasoning
The mushrooms should soak up the melting butter, but don’t ass more, add instead a generous splash of white wine. You can use red but this will make an already dish even richer.

Deep Dark Double Chocolate Brownies

Melt together in a double boiler (or a heat proof bowl over a pan of barely simmering water)

300g dark bitter chocolate ( I vary this according to whim – Valrhona, El Rey, Organic Belgian Callebaut)
250g unsalted organic butter
