   What a beautiful and unusual cake! I’m not a big sweet eater but carrot cake is my favorite. I’ll bet it’s yummy.

   I think on my baking delights blog I did a carrot cake with macadamizs and candied ginger…
   That looks amazing.

   bec, narye, elle, thank you all. This carrot cake is a really healthy one with loads of muts, carrots, pineapple and ginger. It is very moist and I love it. Marye, the candied ginger sounds delicious too. Will have to have a llok for your menu.
