Rum and Lime Syrup

Combine in a small saucepan
150ml organic granulated sugar
75 ml fresh squeezed lime juice
1 teaspoon finely grated lime zest
Heat slowly until the sugar is dissolved, then raise the heat and boil until syrupy (6 – 10 minutes)
Add
1 tot (50ml) of dark rum and stir it in. This will arrest the caramelizing process.
