Rum and Lime Syrup

Combine in a small saucepan

  • 150ml organic granulated sugar
  • 75 ml fresh squeezed lime juice
  • 1 teaspoon finely grated lime zest

Heat slowly until the sugar is dissolved, then raise the heat and boil until syrupy (6 - 10 minutes)

Add

  • 1 tot (50ml) of dark rum and stir it in. This will arrest the caramelizing process.

Once slightly cooled, pour over Mojito cupcakes.
