Toasted Serrano, Wigmore and Strawberry Sandwich

Sandwiches are simple and are often merely opportunistic creations. Whatever is in the fridge is shuffled around and reworked into something delicious. Sometimes this is great at the time but not really worth repeating. Not so, this combo. Try different variations of soft cheese, fruit and charcuterie and you’ll still have a winner.

  • Lightly toast a slice of bread, preferably sourdough
  • Peel a clove of fresh garlic and rub it onto the toast
  • Top with slices of ripe Wigmore ( a Somerset soft cheese), or use camembert, goats cheese or brie if you prefer
  • You can now pop this back under the grill for a minute if you wish
  • Then top with some slivers of Serrano Ham, parma ham or other charcuterie
  • Finally, add slices of ripe strawberry and a drizzle of Balsamic vinegar
  • If you really want to you can add another slice of toast on top
