Breakfast Pancakes with Crispy Smoked Bacon, Organic Ricotta and Spiced Plum Syrup

This is an unusual combination, but not without precedent. My daughter’s Canadian Godfather used to devour this for breakfast with maple syrup.

Feel free to take out the bacon and serve with poached plums and yoghurt, if you wish.

Breakfast pancakes (drop scones)

Sift together:

  • 1 cup (250ml) organic plain flour
  • a pinch of Maldon salt
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cream of tartare
  • 1 Tablespoon of organic caster sugar

Drop 1 large organic egg into a well in the centre

Slowly add 125ml organic milk and beat into a smooth batter with a wooden spoon

Drop onto a hot buttered pan to cook, and allow to brown, flipping over when bubbles break through the top of the batter.

Store cooked pancakes on some kitchen towel on a plate, covered with a tea towel to keep warm, while you finish the batter.

Grill or pan fry some thick cut rashers of organic smoked streaky bacon until it is crispy.

Pile pancakes in a tower and top with a few rashers of bacon, a scoop of organic ricotta cheese and a generous drizzle of warm Spiced Plum Syrup.

Serve immediately with extra cheese and syrup
