Lavender Langues du Chat

These little Cat’s Tongues are crisp, delicate, and the perfect accompaniment to sorbets and fruit ices.

Cream together

  • 100g unsalted butter
  • 100g lavender infused caster sugar

When it is light and fluffy beat in gradually

  • 3 egg whites, lightly beaten to loosen

Fold in

  • 100g plain flour
  • 1 teaspoon lavender flowers

Spoon into a paper piping cone and snip off a 1 cm wide tip.

Pipe 5 – 6 cm strips onto a baking parchment lined tray, spacing them 5 cm apart so they have space to spread

Bake @ 200*C for 7 minutes , or until slightly golden around the edges.

Serve with fruit or honey icecreams
