Core and chop
- 500g granny smith apples, skin on
and simmer briefly with
- 150g of caster sugar (you could use lavender infused sugar here)
- 150ml water
Once the fruit is just softened blitz in a blender with
- 250ml fresh pressed apple juice
- 150ml water
Churn in an ice cream machine and five minutes from the end, add
- 1 egg white, lightly beaten just to loosen.
If not using an icecream machine, freeze in a shallow dish for an hour them take it out and rebeat with a fork to loosen and break up the ice crystals.
Repeat this two or three times, adding the loosened egg white the last time.
Serve with Lavender biscuits.
