Sour Apple Sorbet

Core and chop

  • 500g granny smith apples, skin on

and simmer briefly with

  • 150g of caster sugar (you could use lavender infused sugar here)
  • 150ml water

Once the fruit is just softened blitz in a blender with

  • 250ml fresh pressed apple juice
  • 150ml water

Churn in an ice cream machine and five minutes from the end, add

  • 1 egg white, lightly beaten just to loosen.

If not using an icecream machine, freeze in a shallow dish for an hour them take it out and rebeat with a fork to loosen and break up the ice crystals.

Repeat this two or three times, adding the loosened egg white the last time.

Serve with Lavender biscuits.
