Uncooked Almond Paste (Marzipan)

This marzipan is vastly improved by toasting and grinding almonds especially.

375g of ground almonds
375g of half caster sugar / half icing sugar
2 teaspoons of fresh squeezed lemon juice
3/4 teaspoon of vanilla extract
3/4 of a teaspoon of orange flower water

This cooked marzipan is often flavoured , coloured and used to make sweets.

Slowly dissolve 500g of granulated sugar in 150ml of cold water by stirring over a low heat.
