- Beat together 3 large free range eggs and a cup of milk
- Sift 3/4 of a cup of plain flour with a pinch of salt and 1 – 2 Tablespoons of Vanielje Sugar
- Beat the flour into the egg mix
- Pour into a jug through a strainer and chill for at least an hour.
You can always make the batter the night before which makes you supermom when you serve up fresh pancakes for breakfast
To cook:
- Put a flat bottomed heavy based pan on medium heat
- When the temperature is right, wipe the bottom of the pan with a smear of butter using a piece of the butter paper
- As it sizzles pour in 1/2 cup (125ml) of pancake batter and swirl the pan around so that the bottom is coated with a thin layer
- Allow this to cook until the edges can be lifted away from the pan
- Cook for a further 30 seconds then using a spatula, loosen the pancake and flip it over to cook the other side.
- The batter should all look cooked with no raw patches
- When the second side is starting to turn golden turn onto a plate lined with kitchen towel.
- Put another piece of kitchen towel on top to soak up any excess butter (there shouldn’t be much) and to keep the pancakes warm while you make the rest.
To serve:
- Whip some fresh cream with a little Vanielje Sugar
- Sprinkle some Vanielje Sugar on a pancake
- Top with the cream and fresh chopped strawberries
- Roll up the pancake and repeat with the rest
- Place two pancakes on a plate and top with a few more strawberries and a drizzle of Eau de Vie SyrupÂ
