Waffles have a fond place in my memory as a very rare wimpy treat when on one of our holiday roadtrips as children.  In my mother’s book it was definitely considered junk food, especially when paired with soft serve ice cream and maple flavoured syrup.  I mean is any of that actual food?

Well, these are not only made from yummy ingredients, they are very definitely real food, and it is one of those rare instances when the reality actually tops a memory.

So dig out your waffle iron, ‘cos this is a dead easy trip down memory lane.

SIEVE:

  • 1 ½ cups plain (cake) flour
  • 1 ½ Tbspns baking powder
  • ½ tspn bicarbonate of soda
  • ½ tspn salt

BEAT WITH A FORK:

  • 1 ½ cups buttermilk
  • 2 large free range eggs
  • 6 Tbspns melted butter
  • finely grated zest of 1 unwaxed lemon
  • 1 tspn vanilla extract

Mix together, but don’t overmix.  It is fine if it’s a little lumpy.

Pour a scant  ½ cup of mix into a hot waffle iron (or follow your manufacturer’s directions).

When the waffle iron stops steaming your waffle is done.  Voila!

We serve ours with maple syrup, cinnamon sugar and double cream.  But be creative with yours.  Go wild!

    that sounds yummy! i am not sure i could eat the waffles without hands, though - but there’s some time for practice before the next contest, i guess ;-)

    Val, I’m not sure it’s safe to let people know how easy it is to bribe you. Did I mention I was making some lemon curd Ice cream?

    Kit, I’ve never tried it in a jaffle iron, which is like a tiny little handheld waffle iron that you stick in a fire to make toasted sandwiches, but I’m sure it would work. Imaging that! Camp waffles.

    johanna, all the girls were a little skeptical, but after I ran out of hair clips to clip the requisite teenage fringes back, they sorted tehmselves out and got as stuck in as the boys. Best get your practise in though, because no-one, and I mean no-one, can stuff like a teenager!

    I haven’t made waffles in awhile and decided it was time to pull out the old waffle iron. I had some leftover buttermilk in the frig and decided to search for a new recipe. When I found this recipe, I decided to give it a whirl. The bonus would be that I could use up one of the numerous lemons that my mother-in-law had brought over from her backyard tree.
    My kids are over the moon with them, all three, including the picky one! My husband said they taste like lemon cupcakes, Yum!

    Thanks Nicole. Glad they were worth the effort. These waffles are actually my mom’s recipe and we sell them all the time in the deli. Let me know if you need help with any english / african terminology. xx
