Foolproof Fairycakes

This is a simple Victoria sponge recipe, that works every time and improves over 2 or 3 days.  The recipe makes 6 -8 giant muffins or 12 – 16 regular muffins.
Cream

350g butter
350g caster sugar

Sift together

350g Plain (cake) flour
2 pinches of bicarb
2 t baking powder

Cheese & Pesto Muffins as featured in SA Garden & Home

This mix will make 12 muffins, or six bounteous buxom beauties like these.
Butter and flour your muffin tins.
Sieve:
4 cups flour
8 Tbspns flat baking powder
1 teaspoon mustard powder
A good pinch of flavoured or Maldon sea salt and some fresh black pepper.

Almond & Berry Friands

I have two friand sheets with 9 moulds each.  This recipe usually makes twelve so I do six in each to ensure things bake evenly.

 
Butter your moulds well, then
SIFT:

1/2 cup cake (plain) flour with
1 1/2 cups icing sugar

MIX WITH:

1 cup freshly ground almonds
